Banana bread is something I LOVE to eat. I mean, LOVE! I can dog at least 4 slices by myself and still not feel the need to puke. But that’s another story. I’ve made the boxed versions via Pillsbury and I have to tell you, not so great. Pillsbury for brownies are amazing but not so much for banana bread. I happened upon a recipe and I was intrigued. It is basically fat free but do not be fooled. This is not “healthy” by any means with all the white refined carbs and the sugar. But I figured I’d give it a shot because I’ve seen people use apple sauce as their oil in baking and I wondered how moist the baked good would turn out.
So with overly ripe bananas that would have been tossed, I mashed up a storm with my handy dandy fork (no, I do not believe in mashers) and whipped up the recipe in 10 minutes flat. The end results were delicious! You would never have known that no oil or butter was used in the recipe. So if you want something delicious and semi-good for you, try it! Even on a week night, you will have the time.

To say I love food is an understatement. My life revolves around food and to be honest, whose life doesn’t?
Anyhoo, I’ve been trying some new recipes and I wandered onto The Pioneer Woman. I know, weird name huh? But trust me, her pictures and instructions are wonderfullll. And on top of it, she has the most amusing things to say. Tonight, I’ll be trying her salad dressing on romaine lettuce, grape totatoes, cucumbers, a hard boiled egg and some chickpeas.

After a mini-hiatus, I have returned. I am still trying to decide what this blog should center around and whether I have should a theme. For now, it’ll just be me trying to detail my life and hopefully keep you entertained.
Lately, I’ve been trying to attempt new recipes and to spice up my home-making skills. So far, I’ve tried my hand at pho (vietnamese soup), beef stew and duck. Everything has been pretty decent, although my favorite by far is the duck. Chinese roasted duck courtesy of my mama’s receipe. In case you are wondering, my mom doesn’t have a recipe per se. It is more like a little of this and a little of that. I think that’s the best way to cook. Not worrying too much about the exact measurements but getting a feel so what each ingredient does to your taste buds. (I will post my “recipe” later and post pictures – I’ll be making duck again for Christmas)
So speaking of food, the boy is a HUGE food lover (and how isn’t?!). Here is a snidbit of our conversation two nights ago.
Me: Honey, let’s go to Kohl’s. I want to get a casserole dish for making mac-n-cheese, lasagna and other yummy things.
Boy: Ohhh, lasagna. Let’s make that!
Me: But honey, you hate cheese.
Boy: I like pizza.
Me: Ok, I’ll make lasagna… with extra meat!
Boy: How did you know my aphrodisiac?
Does your man love meat as much as mine? And if he does, what makes him absolutely feel like he has died and gone to heaven? Recipes are appreciated…
